Ingredients:
10 oz brussel sprouts, shaved or chopped (you can buy these already shaved)
2 Tablespoons olive oil
3 Tablespoon lemon juice
2 oz parmesan cheese
1 cucumber, chopped
2 tsp salt
2 tsp garlic powder
8 oz grilled chicken (optional)
Method:
- Place brussel sprouts in a large bowl and combine cucumber, olive oil and lemon juice.
- Let sit for about an hour
- Add salt and garlic powder and toss to coat
- Add Parmesan cheese and combine well
- Add grilled chicken (or your favorite protein) if you wish
