Protein Brownie

The other night after dinner I realized I was very short on protein for the day.   I always like hitting my protein goal each day because protein builds and preserves muscle.  And as you know I am all about building that muscle!

I didn’t feel like any more “food” but I am always in the mood for dessert (who isn’t?).  So I made this yummy, easy, healthy, protein brownie and devoured it pretty quickly.  Not only is it high in protein, but extremely filling and big! Just the way I like my meals!   This delectable dessert has 6 grams of fiber which is key to keeping that belly feeling fuller longer! It’s safe to say I went to be happy and satisfied!

This moist, chocolatey, rich brownie has a whopping 40 grams of protein and no, you would never know it!  It’s so delicious and it’s even sugar free and very low in fat!

I have made many protein brownies before, some better than others.  This one, maybe takes the “cake” of being the best of all time.

Ingredients:

1 scoop PE Science chocolate or chocolate peanut butter protein powder
1 tablespoon Hersey’s Dark Cocoa Powder
1 tablespoon coconut flour
1/4 cup liquid egg whites
2 ounces (56g) plain, non-fat greek yogurt
1/2 teaspoon baking powder
1 tablespoon Swerve Sweetener (I use Swerve – you can use stevia, 2 splenda or regular sugar)

Method:

Mix all of the ingredients in a small bowl
Spray an oven proof ramekin or bowl
Pour batter into bowl
Bake on 350 for 18-20 minutes
***You can also place the batter in a sprayed mug and cook in microwave for 1 minute.  Check it.  If it needs more time cook in 15 second intervals.  Be sure not to overcook as it will get tough.
I personally like it better baked in the oven.

The glob you see on top of the brownie is a mix of chocolate peanut butter.  Feel free to add whatever you like – a small amount of ice cream, whipped cream, berries, chocolate chips, shredded coconut…the possibilities are endless but it is delicious simply on it’s own.
