Shrimp Ceviche


1 pound medium cooked shrimp, (can buy frozen), chopped
1/2 cup lime juice (about 3 limes)
1/2 cup lemon juice (about 3 lemons)
1 cup tomatoes, chopped (I used grape, Roma are good too)
1 cucumber, chopped (I used a Persian cucumber)
1/2 cup cilantro, chopped
1/2 cup red onion, chopped
1 tablespoon salt (or to taste)
2 tsp pepper

optional: avocado, jalapeño


  1. Combine all of the ingredients in a bowl except the cucumber.
  2. Refrigerate for at least and hour, covered.
  3. Add cucumber before serving (you can add avocado if you wish at this time)

Serve with chips or eat on it’s own!
