Buffalo Chicken Salad

Ingredients: 

1 can of shredded chicken breast (you can also make your own in the slow cooker)
2 tablespoons of light mayonnaise or light veganaise (I love the taste of it)
Buffalo hot wings sauce

Method:

  1. Mix the mayonnaise and chicken
  2. Add a few splashes of hot sauce, depending on your taste

Ways I love eating this chicken salad:

  • Adding it salad to a large salad. Add corn, hearts of palm, carrots, purple cabbage and tomatoes with Bolthouse creamy blue cheese dressing.
  • Over rice with a drizzle of low fat blue cheese dressing.
  • In a wrap with shredded carrots, lettuce and red onion.
