Chocolate Chip Banana Oat Loaf


1 cups of oats
1 cup of oat flour
(to incorporate more protein use 1 cup of oats and 1 cup of Quest Multi Purpose Mix Protein Powder)
2 eggs
3 ripe bananas
2 TBS sugar free syrup
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1/4 cup chocolate chips (for a sugar free version use Lily’s Stevia Sweetened Chocolate Chips)


  1. Preheat oven to 350 degrees
  2. Mash bananas with a fork in a medium mixing bowl
  3. Add eggs, syrup and vanilla extract
  4. Mix in oats (and/or protein powder), baking powder and baking soda
  5. When everything is fully combined, fold in chocolate chips
  6. Spray a loaf pan and pour mixture in
  7. Bake for 25 minutes

Feel free to bake as muffins for portion control.
