Cinnamon Honey Roasted Sweet Potatoes


5 sweet potatoes, peeled and diced into 1 inch cubes
⅛  cup light butter, melted
⅛ cup coconut oil, melted
¼ cup honey
2 teaspoons cinnamon

  1. Preheat oven to 425 degrees
  2. In a large mixing bowl add the sweet potatoes, butter, coconut oil, honey and cinnamon
  3. Toss to coat
  4. Spread the sweet potatoes on a baking sheet in a single layer, do not place on top of eachother
  5. Bake for a total 30-35 minutes flipping potatoes halfway through
  6. Mix the sweet potatoes in the sauce at the bottom of the pan and serve
