Coleslaw Salad

Ingredients:

1 bag of coleslaw mix
3 celery stalks, cut up
1 can chickpeas, rinsed and drained
1 cup cherry or grape tomatoes, cut in half
1/3 cup red onion, chopped
1/2 cup roasted red peppers, cut into small pieces
1/2 cup hearts of palm, cut in to small pieces

Dressing:
1/2 olive oil
1/4 cup rice vinegar
2 tbs low sodium soy sauce
salt and pepper to taste

  1. Combine all of the salad ingredients in to a bowl
  2. Pour dressing and toss to coat
  3. Add grilled chicken or shrimp for a complete meal with protein or serve as a side dish
