Crunchy Garlic Shrimp

For the shrimp

1 1/4 lb. large shrimp, peeled and deveined, leave tails intact
3 Tbs olive oil
3 large garlic cloves, chopped
1 1/2 Tbs Dijon mustard
1 1/2 Tbs fresh lemon juice
1/2 cup Panko Bread Crumbs
Kosher salt and freshly ground pepper

  1. Preheat oven to 425 degrees
  2. In a large bowl, toss together the shrimp, olive oil, garlic, mustard and lemon juice, and season generously with salt and pepper
  3. Place shrimp on baking tray
  4. Sprinkle Panko bread crumbs over the shrimp
  5. Roast until the shrimp are opaque throughout, about 8 to 10 minutes.
  6. Garnish the shrimp with the parsley and serve immediately
