Roasted Chickpeas

Ingredients:

1 can chickpeas, rinsed and drained
olive oil spray
salt
pepper
paprika

Method:

  1. Preheat oven to 450 degrees
  2. Place chickpeas on a non-stick baking tray and spray generously with olive oil spray
  3. Sprinkle salt, pepper and paprika
  4. Bake for 35 minutes, tossing about every 10 minutes until they are crispy

For a sweet version:
2 tablespoons of coconut oil, melted
1/4 tsp cinnamon
2 tablespoon brown sugar

Method:

  1. Preheat oven to 450 degrees
  2. In a small bowl toss the chickpeas, sugar and cinnamon
  3. Spread chickpeas on a non-stick baking tray and bake for 30-35 minutes, tossing about every 10 minutes until brown and crispy
