Smashed Potatoes

Ingredients:

1 bag Little yellow potatoes (these are called Little Charmers – yellow creamy potatoes). Any mini potato will do.
1/4 cup olive oil
salt
pepper
garlic powder

Method:

  1. Preheat oven to 375 degrees
  2. Place potatoes in a plastic bag or bowl and drizzle olive oil over them
  3. Add salt and pepper
  4. Toss to coat
  5. Place on baking tray
  6. Bake for about 10 minutes. Pull baking tray out of oven, and using a spatula, press down on each potato “smashing” them
  7. Sprinkle with a bit more salt & garlic powder
  8. Place baking tray back in oven for another 10 minutes
  9. Serve warm
