Ingredients:
1 scoop vanilla protein powder
3 tsp coconut flour
1/4 cup pastry flour
3/4 cup unsweetened applesauce
1 tbs sweetener of choice
1 1/2 tsp baking powder
3 tbs light butter
9 tbs liquid egg whites
Frosting:
1 scoop vanilla protein powder
1 1/2 tsp coconut flour
1 tbs sweetener of choice
1/3 cup plus 1 tbs greek yogurt
Method:
- Preheat oven to 375 degrees
- Combine all ingredients into a bowl and mix well.
- Place parchment paper on baking tray and drop about 1 tsp worth of batter with enough space in between each cookie as they will spread as they bake.
- While cookies are baking make frosting.
- Chill frosting until cookies have cooled.
- Top with sprinkles
