Frittata 🍳!
You know I always love a good recipe that is not only delicious, but waist friendly as well. By substituting egg whites for most of the whole eggs with yolks in this recipe, you will save about 100 calories without sacrificing any of the taste! Furthermore, with the kids back in school, or you back at work, we all have hectic schedules, and who has time to make complicated recipes that take hours to make? I know I don’t and I don’t think you do either!
This frittata is another one of my simple and delicious dishes that takes less than 10 minutes to put together, hardly any clean up, and is packed with protein, an abundance of heart healthy veggies and very little fat! Proving once again that healthy and delicious does not have to be difficult or bland!
I love making this recipe for company as well as my family. It’s always been a real crowd pleaser as its beautiful on the eyes when served and yummy in the tummy.
Remember, eggs don’t always have to be for breakfast! My kids love “breakfast for dinner” and so do I! So if you’re in a rush or tight on time, remember this recipe as a great option any time of the day.
This frittata can also be made into muffin cups for single size portions when you are on the go or meal prepping. They can be eaten at room temperature with no heating necessary which makes them great for planning ahead to grab and go.
Store in refrigerator in container.
Feel free to use whatever vegetables you like and substitute for whatever you prefer. You can also add whatever cheese or other meats that you like for extra flavor. Get creative with your frittata!
Ingredients:
10 Egg Whites
2 Whole Eggs
1 cup Spinach
1 Tomato
5 ounces Ground turkey, chicken or beef
Season with salt and pepper
Method:
Combine all ingredients and place into a sprayed dish.
Bake for 20-30 minutes at 350 degrees
