Healthy Blueberry Muffins

Most of us love a warm scrumptious muffin but with that comes hundreds of calories.  With these muffins there is no need to sacrifice taste or satisfaction! And the best part is they are low calorie, nutritious and delicious!

The muffins are made with oats instead of refined flour, which are wholesome grains that contain fiber, helping you feel fuller longer and enriching your body with vitamins and minerals.  They also contain protein powder, which is essential for maintaining and repairing muscle growth, very satisfying and curbs hunger.   Keep in mind that having adequate protein in your diet fuels fat burning while preserving calorie-burning lean muscle. You don’t get whole grains and protein in your ordinary muffin!

As with all of my recipes they are super simple to make!  That means little clean up and little time in the kitchen.

Store them in the refrigerator for an easy mealprep to grab and go.

Here is the recipe for my healthy B L U E B E R R Y  MUFFINS!

Ingredients:

1 1/4 cup oats
2 scoops vanilla protein powder
1 cup liquid egg whites
1 cup almond milk
1/4 cup sweetener
1 tbs coconut oil
1 1/2 tsp baking powder
1 cup blueberries

Method:

Preheat oven to 350 degrees.
Mix all the ingredients in a bowl except for the blueberries and combine well.
Fold in blueberries.
Bake 20-25 minutes.

Makes 12 muffins
