Healthy Banana Cake

 

I continually make and experiment with different versions of banana cake. Some have a bit more protein, others a bit more fat.  This one is super low calories and all around has a good ratio of each macro. The best part is, it’s truly delicious.  While it serves 10, if you want to go ahead and have more than 1 serving, there should be no guilt involved!

This banana cake is a great option if you are on the go, is really delicious when paired with a cup of coffee, is a super satisfying snack any time of the day, and even makes a great dessert!

Knowing that it is healthy and good for you is an added bonus, because you really can’t tell that its not loaded with sugar and oil like traditional banana cake, yet just as tasty!

As with all of my recipes, not only is it healthy, but simple to make, virtually no mess making for easy clean up and quick to make!

Ingredients:

1 1/4 cup Kodiak Pancake Mix
2 eggs
4 ripe bananas
2 Tbs coconut oil
2 Tbs sugar free maple syrup
1 1/2 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract

Method:

Preheat oven to 350 degrees.
Combine all of the ingredients in a bowl and mix well.
Feel free to fold in nuts or chocolate chips at this time if you wish.
Bake for 30-35 minutes.
