Ingredients:
1 cup oatmeal
1/2 cup self rising whole wheat flour
1 egg
2 bananas, mashed
1/3 cup blueberries (fresh or frozen)
1/4 cup sugar free syrup
1/3 cup unsweetened almond milk
1/3 cup Swerve Sugar Replacement (you can use real sugar or omit completely for a less sweet muffin)
1 tsp cinnamon
1 tsp baking powder
1 tsp vanilla extract
1 tsp salt
- Mix all of the wet ingredients in a bowl
- Add the dry ingredients except the blueberries and combine
- Fold in blueberries
- Place in sprayed muffin tin or muffin liners
- Bake at 350 degrees for 18 minutes
