1 pound medium cooked shrimp, (can buy frozen), chopped
1/2 cup lime juice (about 3 limes)
1/2 cup lemon juice (about 3 lemons)
1 cup tomatoes, chopped (I used grape, Roma are good too)
1 cucumber, chopped (I used a Persian cucumber)
1/2 cup cilantro, chopped
1/2 cup red onion, chopped
1 tablespoon salt (or to taste)
2 tsp pepper
optional: avocado, jalapeño
- Combine all of the ingredients in a bowl except the cucumber.
- Refrigerate for at least and hour, covered.
- Add cucumber before serving (you can add avocado if you wish at this time)
Serve with chips or eat on it’s own!
