Corn Souffle Casserole

Did you offer to bring a side dish for Thanksgiving and are tired of the same old recipes?

Maybe you need an extra side dish but don’t want it to be too complicated or time consuming because you are busy doing other things?

I have just the answer for you! This corn souffle casserole is so easy to make!  There is virtually no mess because it is made in one single bowl, so clean up is super easy.  It can even be baked in a pretty dish and transferred directly to the table.  And the best part is? It is absolutely delicious and sure to be a crowd pleaser!

My Corn Souffle Casserole – A super simple, delicious recipe that take 15 minutes to put together and can be transferred directly to the table.  If you wish to make ahead reheat with tin foil to retain moisture. 

Ingredients:
1 can (15oz) corn, drained
1 can(15oz)  cream-style corn
1 egg, beaten
4 tablespoons butter, melted
1 cup low fat (or fat free) sour cream
1-  8 1/2 oz box corn muffin mix

Method:
Preheat oven to 350 º
Spray a 2-quart casserole dish with Pam or Olive Oil
Combine all ingredients in a mixing bowl and mix well.
Pour into casserole dish and bake 45 – 55 minutes, until set but not too firm and dry
